At the 60-day minimum, the specification describes a compact, weakly elastic cheese with a slightly sharp and sweet taste. Longer maturation brings greater firmness, darker colour and a sharper, more pronounced profile.

Compare like with like

For a meaningful comparison, record the producer, stated maturation, packaging and tasting date. Differences between a young cheese and one matured for six or twelve months may be larger than the distinction suggested by brand alone.
