The specification’s baseline
The PDO describes a slightly sharp and sweet taste that becomes sharper with age, plus the aroma typical of sheep’s cheese with notes of aromatic herbs. The rind ranges from golden yellow to pale reddish-brown.

What changes with age?
At about two months the paste is weakly elastic, dense and pale yellow, with few or no small irregular holes. With maturation it becomes firmer, darker and more pronounced in taste and aroma; after at least six months the dossier describes a finely granular structure that can crumble when cut.
