The Association describes Paška sirana as the island dairy with the longest continuous institutional tradition: it developed from a small agricultural cooperative formed in 1946 and opened a new production plant in 2008.

Flock, milk and production
The Association reports milk from both the dairy’s own flock and long-standing island suppliers. Its range includes PDO Paški sir, other sheep, cow and mixed-milk cheeses, curd products and Pag lamb.

PDO context
Certification means the producer may use the protected name for cheese made in conformity with the Paški sir specification. The PDO requires whole milk from the island’s native sheep, at least 60 days of maturation, and production within Pag, Maun or Škrda.
