History and people

The Association traces the Pernjak family’s cheesemaking tradition to 1890, records household production by Ante and Tonica Pernjak in 1960, and dates the MIH company to 1995. A larger production building entered use in 2006.

Flock, milk and production

MIH reports a flock of 500 milking Pag sheep, machine milking introduced in 2011, and additional Pag sheep’s milk supplied by island farms. The dairy also makes cow and mixed-milk cheeses.

PDO context

Certification means the producer may use the protected name for cheese made in conformity with the Paški sir specification. The PDO requires whole milk from the island’s native sheep, at least 60 days of maturation, and production within Pag, Maun or Škrda.
