The Association dates Sirana Gligora to 1994. Its official shop presents Paški sir as its flagship cheese and documents a broad range of cow, goat, sheep and mixed-milk cheeses.

Flock, milk and production
Gligora states that it uses milk from its own smaller flock and buys Pag sheep’s milk from island families during the milking season. Its current visitor programme covers the production area, maturation cellar and Cheese Bar.

PDO context
Certification means the producer may use the protected name for cheese made in conformity with the Paški sir specification. The PDO requires whole milk from the island’s native sheep, at least 60 days of maturation, and production within Pag, Maun or Škrda.
