Branimir and Ivana Čemeljić run the farm. The Association describes Branimir as an agronomist responsible for the flock and cheesemaking and Ivana as an economist responsible for administration and sales.

Flock, milk and production
The farm reports roughly 80 milking sheep, with its barns and most grazing land around Mandre. Its traditional family mark is III-18: III identifies Kolan and 18 the Čemeljić family.

PDO context
Certification means the producer may use the protected name for cheese made in conformity with the Paški sir specification. The PDO requires whole milk from the island’s native sheep, at least 60 days of maturation, and production within Pag, Maun or Škrda.
